Ingredients

Ingredients Veg kadai

  • 1/2 cup chopped Potato
  • 1/2 cup chopped Carrot
  • 1/2 cup chopped Beans
  • 10 florets cauliflower
  • 1/2 cup chopped Capsicum
  • 1 Bay leaf
  • 1 chopped Onion
  • 1 tsp Ginger garlic paste
  • 1/2 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 1 cup Tomato puree
  • 1 tsp Kasuri methi
  • 1/4 tsp Garam masala powder
  • few Coriander leaves
  • 3 oil
  • Salt to taste
  • Water as required

For kadai masala powder:

  • 2 tsp Coriander seeds
  • 1 tsp Cumin
  • 1/2 tsp Poppy seeds
  • 1 Green cardamom
  • 2 Kashmiri red chilies

Instructions

How to cook the recipe

  • Heat a pan on a low flame, when the pan is hot, add coriander seeds, cumin seeds, poppy seeds, Kashmiri red chilies and green cardamom.
  • Roast them till their aromatic smell comes out.
  • Switch off the flame and allow them to cool down for some time, transfer them into a mixi jar and blend them into a fine powder.
  • Keep the masala powder aside.
  • Add oil in the pressure cooker, once the oil is hot, add bay leaf, add chopped onions and add ginger&garlic paste, saute them well.
  • Add a pinch of turmeric powder, red chili powder and mix them well.
  • Add 1 cup of tomato puree and mix it well.
  • Add kasuri methi, garam masala powder and add the kadai masala powder, mix them well.
  • Add some water as required to adjust gravy consistency and mix well, add salt to taste and mix well. Cook for 4-5 whistle.
  • Wait until the pressure gets released by itself. Open the lid add few coriander leaves which have been finely chopped.
  • Veg kadai is ready.
