Ingredients

Ingredients for Baby corn masala

  • 1 cup baby corn chopped
  • 1 small capsicum sliced
  • 1 cup water
  • 5 tbsp Oil
  • 2 tbsp fresh cream
  • 2 tbsp curd
  • 2 Tomato paste
  • 1 tbsp Ginger Garlic paste
  • 1/4 tsp Turmeric powder
  • 1 1/2 tsp Coriander powder
  • 1 tsp Chilli powder
  • 1/4 tsp pepper powder
  • 3/4 tsp Garam masala
  • 10 Cashew paste
  • 1 tbsp Kasuri methi
  • Coriander leaves
  • mint leaves
  • Salt as required

To grind:

  • 7-8 dry red chilli soaked 20 mins
  • 1 large onion chopped

Instructions

How to cook the recipe

  • Heat 3 tbsp oil in a pan, add chopped baby corn and capsicum saute for 2-3 mins and keep it aside.
  • In the same pan add 1 tbsp oil, add kasuri methi, ginger garlic paste and saute for 1 min, then add grinded onion red chilli paste saute till the raw smell goes and add little salt, tomato paste cook it for 2 minutes.
  • Add turmeric powder, coriander powder, chilli powder, garam masala and salt to taste and stir well on medium flame until it reaches gravy consistency.
  • Add fried baby corn and capsicum mix well and add water cover and cook for 2-3 minutes.
  • Open the lid, add cashew paste, fresh cream and curd mix well, add kasuri methi, pepper powder and coriander leaves, mint leaves and mix well.
  • serve hot with chapathi/rice,paratha/pulao.
